Recipe book, 1848-1921.

Lizzie Emlen Randolph began this compilation of recipes and receipts on November 10, 1848. The last dated entry is from February 9, 1921. In addition to dishes ("cold" slaw, macaroni, Italian cream, biscuits, Indian pudding, apple butter, soup a la reine, tomato farce, etc.), there are also recipes for whitewash, cayenne pepper gargle, uses for salt (toothpaste, cure for cholic), and some medical recipes, including a cholera mixture. Some of the recipes are followed by a person's name, probably the person from whom Lizzie Randolph obtained the recipe. Several of the medical recipes came from Dr. Caspar Wistar; some recipes came from family members (both Wisters and Randolphs). A few recipes cut from newspapers are laid into the volume. The recipes are written in different hands; there is no indication as to the second person was, although it was probably one of Lizzie's daughters. One recipe is noted as being from Delmonico's, and another from "Cooking School," perhaps an edition of Fannie Farmer's Boston Cooking-School Cookbook. At the back of the volume is a section labeled "servants work," describing the tasks expected of servants; the directions are dated 1852-1859. The cook was to wash dishes, help with the milking, bake bread, and make butter, in addition to cooking. The housemaid swept, cleaned, helped with the dishes and the milking, and mended the men's clothing. The chambermaid cleaned the bedrooms, did the laundry and ironing, washed windows as needed, and emptied the slops every morning and evening. The waiter also washed dishes, cleaned the silver, and did some of the cleaning and sweeping. In the front of the volume is a note about making a striped afghan in 1885 for Mrs. L. W.

Elizabeth Emlen Randolph married Louis Wister on July 3, 1850. Louis (born October 27, 1818, died May 2, 1902) was the son of John Wister (1776-1862) and Elizabeth Harvey. Lizzie and Louis had three children: Elsie (b. 1851; married Charles P. Keith in 1883), Philip Randolph (1856-1858), and Sarah Edythe (b.1860; married George Mason Chichester in 1901).
